COLOMBIA NESTOR LASSO | OMBLIGON YEAST FERMENTED NATURAL

This is one of those exciting new varieties, ombligon is the localized term used for this Ethiopian Landrace Variety. Ombligo is belly button in Spanish, and is the reason why locals refer to this variety as the cherry looks like a belly button. It is rare to find and there is talk that the variety arrived to Colombia from Central America, but there is no record of the precise provenance nor date.

The Lasso brothers have been shaking up the specialty coffee industry for a couple years now. Making it to the finals of both World Barista and Brewers cup Championships. They are well skilled artists with some new perspectives. 

This coffee went through a detailed process, oxidation, quenching and precision drying. What came out on the other side is an amazing coffee with bright flavor notes of Pineapple, raspberry and violet.
