" One of our most hotly anticipated moments of the year is finally here - the arrival of coffees from Enrique Lopez’s legendary farm Finca Chelín in Oaxaca’s Sierra Sur.
Enrique is one of Mexico’s most highly regarded coffee producers, with a focus on growing high-quality varietals, and experimental processing methods. He also assists other producers in the region by providing educational training, and access to buyers.
We’ve been lucky to secure a few different lots from Finca Chelín this season, including this consistently classy red honey gesha. It’s soft, round, floral and decadently sweet, reminding us of white peach, panna cotta and violets.
The ripe cherries are first floated, before being laid to rest in concrete tanks until the next morning (roughly 15 hours). The cherries are then de-pulped and laid out to dry on patios (see image below) under direct sun for 2 days to enhance tartaric acidity and complexity, then under shade. "
