Montablanco Estate is a family-owned farm that Rodrigo manages following in his grandfather's footsteps, situated at an elevation of approximately 1730 meters. The 14-hectare estate is located in the mountains near the Suaza River and the Cueva de los Guácharos Natural Park. This microclimate provides excellent weather conditions for cultivating unique coffee varieties. In addition to Pink Bourbon, Rodrigo and his team also cultivate Gesha, Pacamara, Caturra Purple, and more.
The farm practices meticulous work. Coffee cherries are harvested based on their sugar content, which should be between 24°-28° Brix, with a pH value of 5.6-5.9. After harvesting, the cherries are separated from the beans and fermented in tanks for 48 hours. Following fermentation, the coffee is washed and initially dried directly under the sun for 4-5 days, and finally, for 18 days in the shade. This precise and meticulous processing ensures a clean and sweet cup of coffee. ”
